Homemade Pheasant Jerky?

So i want to experiment with some pheasant that are sitting in the freezer. If I were to slice the s in thin strips and soak them in marinade for a couple days and then make a wire rack to hang them on and put them in the oven at like 150F for 6 or 7 hours, would this make a poor mans version of jerky or would i be wasting the meat?
